Friday Favorites | Chicken Fajita Soup

Hey Hey Friday! We have had a great week and I hope you have too. I have mentioned before that I am trying to cook different recipes and find new dinner ideas that my family loves. 


So for today's Friday Favorites, I am sharing my take on Mix and Match Mama's Chicken Fajita Soup.  




My FAVORITE part of the whole recipe is that I made it in the my Slow Cooker. 

In my slow cooker, I added...

*3 chicken breast and drizzled them with EVOO.
* Sprinkled with salt and pepper. 
* I added a packet of McCormick Fajita seasoning 

* Squeezed a fresh lime on the chicken. 

1 (14 oz) can of cream corn

*1 (14 oz) can of diced tomatoes

*1 (4 oz) can of chopped green chiles
*1 cup of chicken stock

I cooked this on low for 8 hours or you can cook on high for 4 hours. 

But around 2.5-3 hours I added in my diced onion and pepper. 

I served over a bowl of rice. 

I topped with cheese and avocado. 

It was delicious and I have eaten it for lunch everyday this week. 




This soup would be perfect for a Saturday afternoon watching football. Just sayin' 😉
