Recipe Club {Ritz Cracker Chicken}

Hello Friends! I can not believe that we only have 4 more days of 2016....CRAZY!

I have been really horrible at "documenting" my meals lately, so I thought I would share my Ritz Cracker Chicken with y'all! I posted this recipe when I had only been blogging for about 2 months, so  I thought it was worth sharing again! Plus, it is our Christmas Dinner meal!! It is seriously one of my families FAVORITE meals!

So join Johannah and I for our Recipe Club Link Up!

Ritz Cracker Chicken

My Mother in Law shared this recipe with me because her Mother in Law shared it with her!
Since it is one of Ian's favorite meals maybe one day I will share it with my daughter in law :)

Ingredients:

4 boneless skinless chicken breast
2 sleeves of ritz crackers
2 cups of parmesan cheese
1 cup of vegetable oil
course ground pepper (optional)

Preheat your oven to 350 degrees

crush the ritz crackers (I do this while they are still in the sleeve)
Crush them really good

Pour the crushed crackers into a bowl and add the parmesan cheese
stir together

My chicken, oil, and cracker/cheese mix

Dip each chicken breast in the oil

Then roll the chicken around in the cracker/cheese mixture

Make sure the chicken is covered with the

cracker/cheese mix and place on a cookie sheet

Then scoop a handful of the mixture and put on top of each piece of chicken!
Sprinkle course ground pepper on top of the chicken!

Place in the oven for about 30 minutes or so
until the chicken is cooked through out

The crackers should be a golden brown

I did not get a picture of the chicken when I
pulled it out of the oven because my kids were "starving"
You know because I never feed them ;)

Hope you enjoy!

I can't wait to see what you guys share today!
So grab our graphic and join us!
