Hey Y'all! Happy Friday! I am sharing one of my VERY FAVORITE SOUPS EVER! It is a Weight Watchers Recipe. It's 0 points so that's a plus. I did get this recipe off the app but I adjusted it to fit my needs.
Ingredients:
4 cups reduced sodium chicken bone broth
1 onion, diced
1 red bell pepper, diced and cubed
1 yellow bell pepper, diced and cubed
2 tsp of minced garlic
2 tsp of ground cumin
1 tsp of chili powder
1 tsp of black pepper
3 small zucchini, diced and cubed
1 can of rotel, fire roasted
1 jar of salsa verde
3 boneless skinless chicken breast
Directions:
Spray your crockpot with avocado cooking spray.
Add all ingredients to your crockpot.
Cook on high for 4 hours or slow for 8 hours.
Once the chicken is cook, take it out, and shred it.
Add the chicken back to the crockpot and stir.
Dish it up and add your toppings....

Y'all it is so good and if we happen to have leftovers, I freeze for my lunches.
