Greek Yogurt Chicken Salad

Hey Friends! I hope your week is going well. Many of you know that I have been a WW member for about a year and a half now.

I am constantly looking for food items low in points. I love chicken salad but the mayo would make it high in points and since I only get 23 points per day I needed to find a lower point option. After looking on Pinterest for a while I found that other WW members were using greek yogurt instead of mayo! Genius I thought...

Let me show you my version of 0 point Chicken Salad. This amount will make about 4-5 meals for me.



I will usually make a big batch of this on Sunday and enjoy it for my lunches and sometimes dinner during the week.

I take 2 large boneless skinless chicken breast and boil them until cooked throughout. Once the chicken is finished and cooling, I dice my grapes and celery.

I use this chopper to get my chicken really fine. Then I add my grapes and celery. You can cut up as much or as little as you would like. I use these items because they are both 0 points.
Then I add 2-3 heaping tablespoons of plain greek yogurt. Stir together. Finally sprinkle in 1/4 teaspoon of Trader Joe's Everything but the Bagel seasoning. Give one last stir.

I eat my chicken salad a variety of ways...

10 Crunchmaster Crackers= 3 Smart Points


In a lettuce boat= 0 Smart Points, 1 pickle spear= 0 Smart Points , 14 Lay's poppables bites= 2 Smart Points. 



In a Wrap, Ole Xtreme Wellness High Fiber Low Carb Wrap=1 Smart Point, 1 pickle spear= 0 Smart Points , 14 Lay's poppables bites= 2 Smart Points. 




Ingredients:

2 boneless skinless chicken breast= 0 Smart Points
Grapes= 0 Smart Points
Celery= 0 Smart Points
2-3 heaping tablespoons of plain greek yogurt.
1/4 teaspoon of Trader Joe's Everything but the Bagel Seasoning = 0 Smart Points

Directions:

Mix all together
Store in air tight container
Serve with crackers, in a lettuce boat, or wrap (will effect point value)
